This tofu dish that originated from Ilocos Region is as delicious as their popular Pork Dinakdakan, but their version of Tofu Dinakdakan is much easier to cook and prepare. 😊
Ingredients:
2 blocks firm tofu
1 white onion diced
2 thumbs ginger finely chopped
1 red bell pepper sliced
1/2 cup mayonnaise
1 tbsp calamansi juice (4 pcs calamansi)
1 tbsp vinegar
1 tbsp white sugar
1/2 tsp ground black pepper
1/3 tsp salt
2 red chili peppers chopped
Spring onions for garnish
Cooking oil (will be used for frying the tofu)
Preparation:
For the tofu:
• Slice the tofu in half, and slice each half into 3 pieces. Fry the sliced tofu over medium-high heat. The tofu should be crispy and golden brown. Slice the fried tofu into small pieces, or cubes. Set aside.
For the mayonnaise mixture:
• In a large bowl, add mayonnaise, calamansi juice, vinegar, sugar, ground black pepper and salt. Mix well.
Procedure:
1. Put the sliced fried tofu in the mayonnaise mixture. Mix until the fried tofu is well-coated with the mayonnaise mixture.
2. Add white onion, ginger, red bell pepper and red chili peppers. Mix again until all ingredients are well-combined.
3. Garnish with spring onions. Serve and enjoy.
Note:
• Add salt according to taste.
