Ginisang Mais with Malunggay Leaves 💚

Ginisang Mais with Malunggay Leaves is a Filipino corn soup sautéed in garlic, onion, tomatoes and chicken strips, with fresh corn kernels and malunggay leaves.

We used yellow corn instead of white corn which is originally used in this recipe. Yellow corn has natural sweetness that makes this soup dish flavorful. To make it more healthy and nutritious, we added malunggay leaves.

Ingredients:

3 cloves of garlic minced
1 onion sliced
2 tomatoes sliced
1/3 tsp salt
1/4 tsp cracked black pepper
1 sachet aji ginisa mix
3 pcs fresh corn, sliced thinly
2 cups of water
1 cup malunggay leaves (1 bunch)

Preparation:

• Start from the top, thinly cut downward the corn off from the cob. Continue the process until all of the kernels are thinly sliced. Set aside.

Procedure of cooking:

1. Sauté the garlic and onion for 2 minutes, or until the onion has softened. Then add in tomatoes. Put the chicken strips, seasoning mix, salt and roughly cracked black pepper. Stir for 5 minutes until the chicken strips juices run clear.

2. After 5 minutes, put the thinly sliced corn. Add 2 cups of water. Mix. Cover and let it simmer for 10 minutes.

3. After 10 minutes, add in the malunggay leaves. Mix. Cover again and let it simmer for another 10 minutes until the malunggay leaves are cooked through.

4. Turn off the heat after 10 minutes. Transfer to a serving bowl. Serve and enjoy.

This soup dish is very easy to cook and in less than an hour, it is ready to be served and eaten with the whole family. 😊
