Saging Con Yelo 💛

Saging Con Yelo is a Filipino dessert that is popular especially during summertime in the Philippines. It is consists of sweetened saba (minatamis na saging ng saba) cooked in sweet syrup (arnibal), shaved ice and evaporated milk.


Our version in this recipe is we cooked the sweetened saba with pandan leaves. To make it more deliciously sweet, we drizzled the Saging Con Yelo with caramel syrup on top. 

Ingredients:

For cooking:

5 pcs saba
1 cup brown sugar
1 tsp vanilla
2 pcs pandan leaves (optional)

For preparing the Saging Con Yelo:

Crushed ice
Evaporated milk
Caramel Syrup (optional)

Procedure:

Cooking of Sweetened Saba:

1. Pour 3 cups of water in a pot. Add 1 and a 1/2 cups of brown sugar. Put 2 pandan leaves. Add 1 tsp of vanilla flavor. Add the sliced bananas, stir and cover.

2. Cook for 15 minutes, or until the saba bananas becomes tender. After 15 minutes, turn off the heat and let it cool. Set aside.

Preparing the Saging Con Yelo:

1. Crush the ice. Set aside.
2. Drizzle the caramel syrup inside the glass. 3. Put crushed ice in the glass but do not overfill it. Put the sweetened saba. Cover with crushed ice. Top it with the sweetened saba. Add a spoonful of sweet liquid. Add evaporated milk.
4. Drizzle with caramel syrup on top. Serve and enjoy.

This delicious iced dessert brings back fond memories of my childhood when our family went to Bicol for vacation. I remember when my cousins and I had fun biking together even though the heat of the sun was scorching our skin. And then we would stop at a store to buy a bowl of Saging Con Yelo (Hinamisang batag na pigkagan kang yelo). Back then, we could buy a large bowl of Saging Con Yelo filled with shaved ice for only P5.00. It was such a delicious iced treat that truly quenches our thirst.

I used to tell this story to my daughter and nephew, and they told me that we should go home to Tatay's hometown in Bicol when the quarantine is over, and buy a big bowl of Saging Con Yelo. 😂
