Spicy Ginataang Langka with Hipon ❤️


Spicy Ginataang Langka is one of a well-loved dish in Bicol region that is cooked and stewed in 2nd and 1st squeeze of coconut milk, and deliciously spiced with red chili peppers. We added some shrimps to make this dish more flavorful. But aside from shrimp, you can also add pork, daing or balaw (shrimp paste) as a substitute ingredients.

This Bicolano dish may not be as popular as Ginataang Natong or Laing (in Manila), but it is as delicious and appetizing as Laing. Try this recipe and share it with your loved ones. 😊

Ingredients:

1 kilo fresh langka (unripe jackfruit)
1/4 tsp roughly cracked ground black pepper
1 shrimp knorr cube
1 white onion sliced (optional, you can use red onion)
4 cloves minced garlic
1 thumb ginger julienned
3 pcs red chili peppers (optional)
3 pcs finger chili peppers
1 cup coconut milk's 2nd squeeze
2 cups coconut milk's 1st squeeze
1 Lemon grass

Procedure:

1. In a large cooking pan, put the thinly sliced unripe jackfruit, then pour 1 cup of coconut milk's 2nd squeeze. Add garlic, ginger, white onion, lemon grass and roughly cracked black pepper. Cover. Let it simmer for 15 minutes, or until the coconut milk's 2nd squeeze has slightly reduced.

2. Add the shrimps once the coconut milk's 2nd squeeze reduced. Add finger chili peppers. Then pour in 2 cups of coconut milk's 1st squeeze. Stir. Add red chili peppers and Cover. Cook over medium heat.

3 Turn off the heat once the 1st squeeze of the coconut milk becomes thick and creamy. Transfer to a serving bowl. Serve and enjoy.

Note:

• We ran out of red onion so we used white onion, whichever of the two onions you use, this Bicolano dish still tastes delicious and appetizing.
• If you're not a fan of spicy foods, you can remove the red chili peppers.
• Apply a generous amount of oil on your hands and knife before slicing the unripe jackfruit to avoid the white sap from sticking to your hands.
• Place paper under unripe jackfruit before slicing it so that the white sticky sap drips directly on the paper and not on the slab of your kitchen.
• Add salt according to taste.
